I’m not a cook.

Not that I can’t cook. I just don’t enjoy cooking.

Occasionally, though, I’ll get inspired to make dinner for my family {versus having my husband bring home take-out}, so I keep a few basic staples on hand: frozen chicken breasts, rice, and frozen veggies.

How to Make Chicken and Rice Stir-Fry

  1. Cook rice according to package directions.
  2. While rice is cooking, nuke chicken breasts {I use 3-4 for 4 people} in the microwave 1 minute.
  3. Slice/chop chicken breasts into bite-sized pieces and sauté in a skillet that has been drizzled with oil. Add seasoning and teriyaki {or soy} sauce to flavor as desired.
  4. When chicken is cooked through, add veggies {I used 1/2 bag frozen corn and 1/2 bag frozen broccoli} and cook thoroughly.
  5. When rice is cooked, add to skillet and combine. Add additional teriyaki {or soy} sauce to bring dish to desired flavor.
